A rose leaf…

Even for us a “simple” rose leaf has a process.  This is one of the things our interns learn how to do during their internships.  They make about 1500 in one batch.  One of the reasons for the repetition is to learn muscle memory in their hands.  The more you practice, the better you will you will get.  Our interns make the rose leaves from start to finish. Lauren has been through the beginning part of the process of rolling out the sugar paste, cutting, texturing.  She is now learning how to dust the rose leaves to bring them to “life”.

Everything we do here at the bakery has its own process. This is the second step of the rose leaf process, the dusting. The last step is a dip in sugar shellac to make the leaves shiny.
