			<content:encoded><![CDATA[<p style="text-align:justify;">What wonderful news we heard last year that same sex couples could get married legally in New York State.  We were thrilled to hear this news!  Weddings for everyone!  We have seen an increase in wedding cakes for same sex couples and so far we have booked about 8 cakes this year, last year we had 2.</p>
<p style="text-align:justify;">The wedding industry as we have known it has always been “pretty”.  Because a majority of weddings are planned by women, you tend to see the softer side in most wedding events.  This year we have had many gay men come sit at our table for design sessions, and bring very masculine elements to reflect who they are for their own events.  Our bakery is known for a well-executed, creative design and our sugar flowers.  A majority of our wedding cakes fall into that “pretty” category.  However most of our gay couples have told us they don’t want to see sugar flowers on their cakes and they want something different with a more masculine feel.  And rightfully so!  Weddings are a direct reflection of who the couple is.   We have already started to see a shift in the industry and it’s very exciting.  Of course the obvious being the design element of a room, less traditional floral décor, the cake and non-traditional venues.</p>
<p style="text-align:justify;">A few months ago we sat down with Peter and Antonio, they recently got married and their reception was at the The Glass Houses in NYC.  During the consultation, Ron asked about the venue, décor, invites, flowers, cuisine and then some.  When they showed Ron the invite, he was very excited.  The invite was inspired by the television show “Mad Men”.  This couple did not want a “traditional” cake so Ron took the design in another direction; he was inspired by the graphics on the invitation.</p>

<p style="text-align:justify;">I think it will be interesting to see how the bridal magazine market handles these changes and what they take away from these weddings as far as trends.  This is a very exciting time for our industry and opening the door for new and creative ideas for all weddings to enjoy, I can’t wait to see more…</p>

			<content:encoded><![CDATA[<p>It is official &#8211; wedding season is upon us.  I have printed all of the packing slips and gathered all of the details for the staff for June and the orders are still coming in.  I have my organized piles on my desk and I don’t think I have room for any more.  For me this is the most challenging time of year, we get the most appointments in May and June and we are very busy with cakes each weekend.  How do I manage it all?  First I take a deep breath and remind myself it’s only cake, not the end of the world.  Second, once I have the calendar written and the packing slips printed and handed to the design crew, I constantly check that everyone has the same pieces of information.  Is this tedious? Yes it is, but well worth it.  Because my volume of details for the next two months is so great, me double and triple checking myself allows me to catch whatever mistakes I have made early on, so I still have time to fix them. </p>

YES.  A big resounding yes!  I do realize that a lot of our supporters and fans enjoy looking at our work and we love you for doing so!  But for us watermarking is a way of keeping our designs safe.  If you are a professional baker I recommend you do the same.  There are some nasty bakers out there that have stolen our photos and have used them on their sites to promote their work.  This happens a lot, not only to us, but to many of our colleagues as well.   The watermark we put on our photos are light so you can still see the detail, but we put enough of a mark on there to protect our work.  If there is any advice that we can give to our baker friends it is this:  protect yourself and your brand, watermark you photos!!!</p>

			<content:encoded><![CDATA[<p style="text-align:justify;">In my job I read a lot of wedding magazines for research.  I like to see what’s trending for cakes, flowers, dresses, décor and what advice they are offering brides for their wedding process.  A few years ago a piece of advice magazines were offering were to get “visuals” from your vendors.  I do have some thoughts on this and I actually wish the magazines would ask the vendors their point of view on this subject.</p>
<p style="text-align:justify;">I do have to say that we do very little sketching here at the bakery.  There is a good reason for this, if we have done the structure before, there is no need for us to do a sketch.  90% of the time we are recreating the same structures, sure the surface details change and the flowers change, but not the structure.  We always offer the client a photo of a cake that is similar to what they are getting and mark things on the photo that is applicable to the clients design.  So really there is no need for us to sketch in this situation.  The contract that we present to our clients has a very detailed description of their cake design. (Of course there is always an exception to this rule because every client is different.)</p>
<p style="text-align:justify;">Now if it’s something that we have never done before, a sketch is absolutely necessary.  There are logistics that need to be worked out between our head chef and the design team.</p>

This project was a little tricky and we needed to figure out how we could make everything stack up. (Pun intended...)</p></div>
<p style="text-align:justify;">Another point I would like to bring up is that we are not artists.  Well we are – but our medium is sugar, not paper.  With that being said, our outcome is ALWAYS so much better than the sketch we present to our clients. If we ever produce a sketch, it’s always done after we have received the deposit to book the date.  This is to ensure they won’t take our work to another baker to execute. (Yes – it has happened before.)</p>
<p>I am not saying that sketching is bad and it shouldn’t be done, it’s just not always necessary and clients need to understand that.  The magazines are offering this advice because they think it’s a good idea.  Every baker’s policy is different on this subject and I think the advice that magazines sometimes offer is too vague.</p>
<p style="text-align:justify;">Sketches take time and in turn take away from our design team working on sugar flowers and cakes.  If we do a sketch for a client, we basically try to do only one.  While we understand the design process can be complex and does go back and forth, adding drawings into the mix can sometimes make the process longer than it needs to be.  People do not know how our company operates, how are staff&#8217;s time is divided in their work duties and depending on the time of year, can actually create problems in our production schedule.  And in most cases sketches are done after the staff’s full day of work, so now we are paying over time to get a sketch done that is not built in to the overall cost of the cake.  Ahh, something to think about if you are a baker…</p>

I design wedding and birthday cakes for clients over the phone and through email. They will get a very basic sketch from me that gives the idea of what we are going to do. These clients never set foot in our bakery and this is the easiest way to communicate with them. As you can see the cake on the left is so much better than the cake sketch on the right.</p></div>
<p style="text-align:justify;">How do you feel about this matter? Have you sketched something for a client without a deposit only to find out another baker has executed your design?  I would love to hear your thoughts on this subject…</p>

			<content:encoded><![CDATA[<p style="text-align:justify;">This was a very exciting project for us.  The editors of Brides magazine came to us in February and asked us to recreate a specific cake for them.  The cake that they asked for was the wedding cake of Princess Victoria of England and Frederick William of Prussia from 1858.  There are no photographs of this cake, but only a sketch.  WE jumped at the chance to be able to recreate this intricate work of art that was inspired by the St. Bride’s church in London.</p>

You will see in the original design that there were some posed people and cherubs that are not present on our cake. We find making people out of sugar a little creepy, so we opted to put sugar flowers on the cake instead. Our cake stands 42 inches tall.</p></div>

			<content:encoded><![CDATA[<p>Sometimes when you look at our cakes and there are elements on the cake that are “shiny”.  And then you ask yourself &#8211; how do we do that?  It’s simple really; we use a clothing steamer with distilled water. (Distilled water can be purchased in any drugstore.)   The sugar flowers don’t stay under the steam for too long, but when steam is applied to anything made out of sugar, you get a very shiny surface.  It’s a nice way to add dimension to any cake design. (Please note &#8211; the steam will only last for a few days and than go back to the flat fondant look. You can always re-steam if necessary.)</p>

Not too close to the steam though, if any droplets of water should get on your finished sugar piece it will melt. So be careful when applying this technique!</p></div>

Over the weekend, I was talking a walk in my neighborhood and one of my neighbors has the most beautiful peonies in her garden.  Of course I happened to have a camera on me (as I usually do) and took a few shots of the lovely blooms.</p>

<p style="text-align:justify;">One of the many things Ron teaches and expects of his staff, is research then a follow through in execution.   I see this in our sugar flowers time and again.  Ron’s crew really takes the time to look at pictures and handle real flowers to figure out how to execute the curves and the many nuances you see in nature.  The staff makes hundreds if not thousands of sugar flowers each year.  Ron still takes the time to go over each flower with his staff to make sure he is happy with the result.</p>
